Apple Varieties Rated by Consumers

In a Michigan State University consumer study of apple varieties in Detroit, prepackaged fresh apples were chosen in the following descending order: 'Delicious', 'Jonathan', 'McIntosh', 'Northern Spy' and 'Rhode Island Greening'. However, when the same varieties in the processed form were judged by the same consumers, they were rated as follows, in descending order:
Apple Sauce (by appearance): 'Delicious', 'Rhode Island Greening', 'Northern Spy', 'McIntosh'.
Apple Sauce (by taste): 'Northern Spy' first, and no agreement for 'Delicious', 'Rhode Island Greening', 'Jonathan'.
Spiced Apple Rings (by appearance): 'Delicious', 'Jonathan', 'Northern Spy', 'McIntosh'.
Spiced Apple Rings (by taste): 'Jonathan', 'Delicious', McIntosh', 'Northern Spy'.
Pies (from frozen and dehydrofrozen apples): Consumer panel showed no preferences {or anyone variety over another.
